Punjabi Tikki

Ingredients:-

  • 500 gm Medium size Potatoes (6)
  • 1/2 cup boiled or frozen peas
  • 1 tsp oil for frying the tikki
  • Salt as per taste
  • 1½ tsp Ground cumin ( jeera powder)
  • 2 tsp Ginger finely chopped
  • 2 tsp Coriander leaves finely chopped
  • 3-4 green chilies finely chopped
  • 1/2 tsp red chili powder
  • 1 tsp chaat masala
  • 1/4 tsp garam masala
  • 1/2 tsp coriander powder
  • 2 tsp corn starch or rice flour or arrowroot flour, add as required

How to prepare recipe:-

  • First rinse and then steam or pressure cook the potatoes till they are falling part.
  • Once they are cooked , drain then completely
  • Peel and mash potatoes.
  • Add oil, peas, salt,cumin (jeera), chopped green chilies, ginger, coriander powder, coriander leaves,red chili powder, chaat masala, garam masala and corn starch
  • Just mix everything very well
  • Divided this mixture in small Tikki. Make tikki of 3″ diameter
  • Heat oil till its medium hot in a tawa or a frying pan.
  • Arrange tikkis on it.
  •  When one side of tikki become golden and crisp, turn over and fry the other side of tikki, gently flip for a couple of time till the allo tikki become golden and crisp evently
  • Serve the aloo tikki with coriander chutney or tomato saus and sweet yogurt.

Bread Chaat Recipe

Welcome to my kitchen.Today we are prepare Bread Chaat Recipe.

Ingredients:-

  • 6 Bread (white / brown) Slices,
  • curd 1 cup.
  • onion 1 thinly sliced,
  • Roasted Cumin Powder – to sprinkle 1/2 tsp
  • Red chilly powder to sprinkle 1/4 tsp
  • chaat masala 1/2 tsp to sprinkle
  • boiled potato 1 finely chopped
  • Tomato – handful (chopped)
  • Cilantro – 2 tbsp (finely chopped)
  • Sev and / or Bhoondhi – 1/2 cup
  • Peas 1 cup
  • Pomegranate pearls – 1/4 cup (finely chopped)
  • Tamarind Chutney – as needed
  • Green Chutney – as needed

How to prepare recipe:-

  1. Firstly, cut bread slices into round shape by bowl. Roast / Grill the bread slices and place into plate. The bread slices should be crispy. Pressure cook the peas with some turmeric powder, salt, chilly powder, garam masala and some tamarind juice. You can also cook this using a slow cooker or using a normal vessel on stove top. You need soft peas along with a semi thick gravy.
  2. Apply green chuteny over the bread , spread it nicely. Then add onion,potato,check peas.Pour the beaten yogurt over that. Also add some pomegranate pearls.
  3. Sprinkle some red chili powder, cumin powder and chaat masala over the yogurt.
  4. Sprinkle sev and/or boondhi on top and serve.

Turmeric Pickle Recipe (Haldi ka Achar)

Turmeric has many medicinal properties, So its ethics is also rich in taste & many properties. According Ayurveda turmeric is used for epilepsy and bleeding disorders, skin diseases, to purify the body-mind, and to help the lungs expel Kapha.

Ingredients:-

  • Mustered oil 1/2 cup,
  • Raw turmeric 2½ cup fine chopped,
  • Salt 2½ tsp
  • Red chilly powder 1/2 tsp,
  • Mustard seeds powder – 2½ tsp
  • Fenugreek seeds – 2½ tsp (coarsely grounded)
  • Ginger powder 1 tsp
  • Asafoetida – 2-3 pinch (Hing)
  • Lemon juice ½ cup

How to prepare recipe:-

  • Take mustard oil in a pan and place it on flame for heating. After heating it bring it to room temperature and add asafoetida, fenugreek seeds, salt, red chilly powder,mustered seed powder,ginger powder and grated turmeric. Mix all ingredients really well. Take out pickle in a bowl and add lemon juice into it. Cover the pickle and keep it aside. After 4-5 minutes stir the pickle with help of a spoon.
  • Store it in a dry glass jar or containers made with clay. If possible keep the container in sunlight for 2 -3 days.
  • Turmeric pickle is ready.

Lassi from Milk

Lassi is very cooling and refreshing drink to have in  summer.Today we are preparing Lassi from Raw milk.

Ingredients:-

  • 2 Glass Raw Milk (full cream milk),
  • 2 Table spoon Rose Water
  • 1 Tablespoon Cardamom Powder
  • 5-10 Tablespoon Sugar or add as per Taste
  • 6-8 Ice-Cubes,Optional

How to prepare recipe:-

  • In a Big Bowl, take 2 Glass Raw Milk.
  • And add rose water,cardamom powder, sugar mix it well in blander.
  • The consistency of this lassi nether thin or nor thick.
  • Add some ice cube.
  • Pour lassi in glass and serve. If you want, you can also add top the lassi 1 tsp of malai and 1 pinch of cardamom powder.
If you drink this lassi after take mile then mile will be digestive very easily.

Bread Dosa

Ingredients:-

  • White Bread 10
  • 1/2 cup semolina (suji)
  • 2 tabelspoons yogurt (curd)
  • 1 tbs rice flour
  • 1 inch ginger finely chopped
  • 3-4 green chillies finely chopped
  • 8-10 curry leaves
  • salt as per taste
  • 2 tbs oil / ghee for shallow frying

How to prepare recipe:-

  • firstly, cut edges portion of all bread slices by knife.
  • Take a big bowl and soak the bread slices in some water for softness .
  • And take other bowl now add half cup sooji (rava / semolina),ginger, curry leaves, green chilies, rice flour, curd, ¼ cup water and some salt to taste. Mix it well.
  • Now take the soaked ingredients in a blender and blend to smooth dosa batter consistency. add water if required.
  • Take a frying pan / tava and heat it. Smear some water over the tawa and wipe off with a tissue paper. Sprinkle some oil and wipe off with a tissue.
  • Once the tawa is hot; pour a ladleful of batter and spread out in a circular motion. And some oil add on top of the dosa. Cook for 10-20 seconds or till it turns golden brown and crisp. Fold the dosa into half or roll into circular.
  • Serve Bread dosa hot with coconut chutney, tomatoes saus and sambar.

Purple Yam Pancake

Pancake / Chilla is a favorite snack, which has withstood the test of time. Normally we made with a batter of besan or moong dal, these pancakes have a very homely & tasty in taste.

Ingredients:-

  • Add 1 cup grated purple yam
  • 1 tsp thin chopped green chili
  • 1/2 cumin seeds (jeera)
  • butter / oil / ghee as needed
  • salt as per taste
  • 1/2 cup fine chopped onion

How to prepare recipe:-

  • In a deep bowl, add all ingredients and mix well.
  • This mixture divided into 2 portions.
  • Heat a non-stick tava / frying pan.
  • When non stick tava has been hot, grease it with little butter, take one portion of the mixture and spread it evenly using wet fingers.
  • Cook on a medium flame for 2 minutes  & cover it with a lid and , turn it over and cook on the other side till golden brown in color.
  • Serve hot Purple Yam Pancake with green chutnuey or tomato ketchup.

Corn & Mushroom Tostada

This is a Spanish Dish. Tostada is a Spanish Word which means ‘Toasted’.

Ingredients:-

  • 1 sheet of corn tortilla (makke ki roti)
  • 50 gm mushroom chopped
  • 1 tsp thyme (ajwain)
  • 5 ml olive oil / butter
  • 2-3 fine chopped green chili
  • 1/2 cup fine chopped coriander
  • 1 small onion fine chopped
  • 1 tbs fine chopped garlic
  • 1 avocado (nashpati) fine chopped
  • 1 portion of cheese dip
  • Sour cream, tomato ketchup and salsa for garnishing
  • Salt as per taste

How to prepare recipe:-

  • Firstly, you take a tava / frying pan (non-stick) and heat it.
  • Saute mushroom and garlic in butter.
  • Add onion, thyme, green chili, coriander and mix together.
  • Add salt to taste.
  • Roll and fry a tortilla sheet into a bowl like shape.
  • Put the above filling in tortilla bowl.
  • Filling in this cup for garnishing tomato ketchup, avocado slices and sour cream.
  • serve with cheese dip.

Corn Fritters

Ingredients:-

  • 2 cups boiled corn
  • 1/2 cup boiled & crushed corn
  • 3-4 tbsp veg mayonnaise
  • 4-5 tbsp breadcrumbs
  • 2 tbsp refined flour (maida)
  • oil for deep frying
  • 1 tbsp fine chopped coriander leaves
  • salt for taste
  • 1 pinch black pepper
  • 1 small size onion fine chopped
  • Tomato ketchup for serving

How to prepare recipe:-

  • Take a kadai and heat it.
  • Take a bowl and mix  together boiled corn, crushed corn, breadcrumbs, refined flour, chopped coriander leaves, onion.
  • Add veg mayonnaise and mix it well.
  • After that , add salt and black pepper and mix it well.
  • prepare a small size ball by this mixture.
  • and fry these ball in oil till golden brown.
  • Serve this with tomato ketchup or green chutney.
