Sambar

Ingredients:-

  • 1/2 cup Pigeon Pea Lentil or Tuvar or Arhar Dal (soak for 1 hr.)
  • Cleaned and chopped vegetables (1 small size okra, 15-20 french beans, 2 Potatoes,    2 onion, 2 small size brinjals, 100 gm Pumpkin, 2-3 tomatoes or 1 cabbages etc.
  • Lemon sized ball of seedless Tamarind (imali) soaked in 1/4 cup hot water for 30 minutes
  • 2 tsp Sambar Powder
  • 1/2 tsp Red chilli Powder
  • 1/2 tsp Turmeric (haldi)
  • 3 pinch Asafoetida (Hing)
  • Salt as per taste
  • 1/2 tsp Mustard Seeds (Sarson)
  • 10-15 curry leaves
  • 2 tbsp oil
  • 2-4 Dry Red Chillie
  • 1 tsp Fenugreek Seeds (methi dana)
  • 3-4 Garlic Cloves

How to make Sambar:-

  • Take a deep bowl and put dal with 2 cup of water in this bowl. Wash it well.
  • Take a pressure cooker and put dal with 2 to 2.5 cup water in this pressure cooker for 6-7 whistles. Till this Dal become soft. Mash it well.
  • Once the pressure settles down on its own. remove the lid.
  • In this pressure cooker add vegetables turmeric powder, Red chilli powder, Asafoetida and salt.
  • Add 1-2 cup water. Stir well.
  • Pressure cook it 1 whistle. After that add sambar powder,tamarind pulp. 
  • Cooke it on low flame 10-15 minutes.
  • Turn side.
  • Take a frying pan and heat oil in this pan.
  • When the oil become heat add mustard seeds and crackle it.
  • Add Fenugreek seeds , Garlic, Dry Red chilli, asafoetida and curry leaves.
  • Fry till garlic become light brown.
  • Pour the whole tempering in the hot sambar.
  • Serve the sambar with steam rice, Idli, dosa or Vada. 

Colocasia with pulses Recipe (Arbi with Dal Recipe)


Ingredients :-

  • 2 cup Red Lentils (Red Masoor Dal)
  • 2 tsp ginger, green chilli and garlic paste
  • 1 fine chopped onion
  • 3 fine chopped tomatoes
  • 1 tsp cumin seeds (jeera)
  • 1 cup (peel and prick them with fork randomly) colocasia (arbi)
  • Salt as per taste
  • 2 tsp oil
  • 1 tsp turmeric powder (Haldi)

How to prepare Recipe:-

  • Wash and boiled the Red Lentils, Colocasia, turmeric powder, salt  with 2.5 cup water in a pressure cooker after 2 whistle lower down the flame and let it cook for 4-5 minutes.
  • Take a frying pan and heat oil into it.
  • Add cumin seeds when seeds starts crackle, add ginger, green chilli, garlic paste and fry for few minutes after that add onion and cooked till soften, when onion soften you add tomatoes and cook few minutes.
  • In this Mixture, add Red Lentils and Colocasia, cover with a lid & cook some minutes.
  • Garnish with coriander leaves.
  • Arbi with dal recipe is ready. 
  • Serve it with hot chapatis or paranthas or rice.

Bhature Recipe

Bhature is very spice and delicious Dish. This is my family favorite dish. Chole Bhatoore is Punjab’s favorite recipe. Let make Bhature at home today.

Ingredients:-

  • Refined Flour 500gm (Maida)
  • Salt 3/4 tea spoon (Namak)
  • Sugar 1/2 tea spoon 
  • Baking Powder 1 tea spoon
  • Yogurt -100gms (Dahi) (1/2 cup)
  • Oil for deep frying
How to Make Bhature:-
  • Take a bowl and in this bowl take refined flour, salt, sugar, baking powder mix it well.
  • After that in mixture mix 2 tea spoon oil and yogurt and mix well.
  • Mix all ingredients with hand & knead the dough with lukewarm water. 
  • Cover the dough and keep it warm place in your home overnight or 8 hours to allow natural fermentation to take place.
  • After 8 hours or overnight you will see very small bubbles on the surface of this dough.
  • Heat oil in a pan for deep frying as the same way as you would frying pooris.
  • Take a portion of this dough for preparing small ball.
  • Take a rolling board, put this ball on this board and roll it into a flat disk of bigger and little thick than poories size.
  • Put the bhatura into the hot oil and press with the ladle very softly.
  • Fry bhatura till golden brown.
  • Spread a Napkin on a plate and keep the bhatura on it for remove the excess oil.
  • Make all bhaturas in this way.
  • Serve this bhatura with chole and green chutney.

Semolina Slice

You can also says that rava toast or sooji slice. A quick and easy Semolina Slice that can be prepare in just few minutes.

Ingredients:-

  • Add 2 thin chopped tomatoes
  • Add 5-6 white & brown bread slices
  • Add 1 thin chopped onion
  • Add 1 fine chopped green chili
  • Add 1 teaspoon cream or malai
  • Add 3-4 tsp semolina (sooji)
  • Add 1 fine chopped  capsicum
  • Add 2 tsp coriander leaves
  • Add 1/2 tsp red chili powder
  • Add 1 tsp cumin (jeera)
  • Add 1/2 tsp chaat masala
  • Add salt as per taste
  • Add oil for frying the slices

How to prepare recipe:-

  1. In a bowl, add tomatoes,onion, green chili,capsicum,red chili powder,cumin,chaat masala and salt and mix well.
  2. In this mixture cream and semolina are also mix well.
  3. Heat a tava / frying pan.
  4. On the bread slices, spread the mixture evenly with a spoon
  5.  On a Hot Tava/ frying pan take 1 tsp oil for each bread slices.
  6. Place the filling side down & cook it till the onion, tomatoes are lightly brown.
  7. When onion and tomatoes are lightly brown, turn over and toast the bread other side.
  8. You can flip once and twice and cook more if you required.
  9. you can cut the toast triangular and square pices
  10. serve hot semolina slices with green chutnuey or tomato ketchup.

Veggies Pizza

Ingredients:-

         -Ready made pizza bases
       –100-150 gm mozzarella cheese-grated (1-2 cup)
       –1/2 green capsicum or 1/2 yellow capsicum(finally chopped or cut into 1/2″squares)
       -A few olives, 1 tomato(cut into 8 pieces)
       –3-4 baby corns
  
TOMATO SPREAD:-
        –1 tbsp oil
        –1 tsp garlic paste
        –1/2 cup ready made tomato puree
        –2 tbsp tomato ketchup,
        –1 tsp oregano
        –salt as per taste
        –1/4 tsp pepper(kali mirach)


How to prepare recipe:-

        –Take a pizza base and brush the bottom with oil.
        –Place with bottom side up on the greased tawa placed on a high rack.
        –Grill for 3-4 minutes till pizza bases become crisp and golden
        –For Tomato spread, put all ingredients of the tomato spread in a bowl and microwave for 2 & 1/2       minutes.
        –Spread on each pizza base, leaving the Edges.
        –Arrange some vegetables.
        –Sprinkle some salt and pepper. Sprinkle cheese & some oregano.
        –Arrange a few vegetables on top
        –Grill again for 4 minutes.
        –Serve veggie pizza with Tomato Ketchup.

Punjabi Tikki

Ingredients:-

  • 500 gm Medium size Potatoes (6)
  • 1/2 cup boiled or frozen peas
  • 1 tsp oil for frying the tikki
  • Salt as per taste
  • 1½ tsp Ground cumin ( jeera powder)
  • 2 tsp Ginger finely chopped
  • 2 tsp Coriander leaves finely chopped
  • 3-4 green chilies finely chopped
  • 1/2 tsp red chili powder
  • 1 tsp chaat masala
  • 1/4 tsp garam masala
  • 1/2 tsp coriander powder
  • 2 tsp corn starch or rice flour or arrowroot flour, add as required

How to prepare recipe:-

  • First rinse and then steam or pressure cook the potatoes till they are falling part.
  • Once they are cooked , drain then completely
  • Peel and mash potatoes.
  • Add oil, peas, salt,cumin (jeera), chopped green chilies, ginger, coriander powder, coriander leaves,red chili powder, chaat masala, garam masala and corn starch
  • Just mix everything very well
  • Divided this mixture in small Tikki. Make tikki of 3″ diameter
  • Heat oil till its medium hot in a tawa or a frying pan.
  • Arrange tikkis on it.
  •  When one side of tikki become golden and crisp, turn over and fry the other side of tikki, gently flip for a couple of time till the allo tikki become golden and crisp evently
  • Serve the aloo tikki with coriander chutney or tomato saus and sweet yogurt.
